Kouklas, a Greek restaurant just outside Chicago, makes a subspecialty of the cuisine's wide variety of dips and spreads. Their tirokafteri, a tangy silky dip with feta and roasted red peppers, is an easy-to-make example that may remind your guests of pimento cheese.
