Christopher Kim, owner of Portland food cart Nice Time, garnishes a pasta dish. Kim makes sauces to order and limits the menu to eight dishes, each requiring more than 20 steps from pan to garnish.

There is something wonderfully impractical about Nice Time, a Korean-Italian food cart where Christopher Kim goes to unusual lengths to make some of Portland’s most memorable pasta.
